Easy Baked Apples for Two is a quintessential winter dessert, from the classic warming spice of cinnamon, to the smell of baked apples in your kitchen- delicious!  My mom made these throughout my childhood (and adulthood) and are a family favorite.  These Easy Baked Apples for Two are relatively low in sugar compared to other desserts during the holiday season 😊 This recipe can easily be expanded to serve as many people as you would like. 

Serves: 2

Prep time: 5 minutes

Cooking time: 40 minutes

What (your ingredients):

2 fuji apples (or granny smith apples)

2 teaspoons butter

2 teaspoons coconut sugar for apples

Dash of cinnamon

1 tablespoon coconut sugar for liquid

2/3 cup boiling water

How (your directions):

Preheat oven to 375°F.

Bring water to a boil.

Meanwhile, cut off the top of each apple and core the apple about ¾ of the way to the bottom.

Place apples into a small baking dish.

Fill each apple with a teaspoon of coconut sugar and top each with a teaspoon of butter.  Sprinkle each apple with a dash of cinnamon. 

In the bottom of the baking dish, combine boiling water and 1 tablespoon coconut sugar.

Bake for 30 minutes.

Remove the apples from the oven and baste the apples with the liquid from the bottom of the baking dish.

Bake an additional 10 minutes.

Serve each apple in a bowl with ½ of the liquid from the bottom of the baking dish.

Optional: serve with whipped cream or a scoop of vanilla ice cream!

Why (the science):  I tend to bake with coconut sugar instead of white or brown sugar, because coconut sugar has fiber and trace amounts of antioxidants (although Buyer Beware!  Coconut sugar is still a sweetener with calories 😉 So, enjoy in moderation).
