Matcha and Cacao Truffles

Matcha and Cacao Truffles

Yes, truffles can be nutritious!  Made with nuts, seeds, fruit, and citrus zest, these truffles are gilded with superfood powders to give you long-lasting energy…truffles for breakfast anyone?

What (your ingredients):

5 dates, pitted

10-12 prunes

1 cup almonds

½ cup hemp seeds

The zest of 1 orange

½ cup oats

Matcha powder

Cacao powder

How (your directions):

Place dates and prunes in a bowl.  Boil water in a kettle and then pour boiling water over dried fruit until covered.  Let soak for 10-20 minutes. 

In a blender, combine drained dates, prunes, almonds, hemp hearts, and orange zest until a thick paste has formed.

Place paste in a large mixing bowl and add oats.  Combine well.

Form small balls in the palm of your hand and then roll in matcha powder or cacao powder.

Store in the fridge overnight so that truffles will firm.

Enjoy as a midafternoon snack or as dessert!

Why (the science):  Matcha powder provides an “alert calm” to get you through an afternoon slump, while cacao powder is a great source of fiber and iron.  Who knew?!
