Ever heard that wheat grass is too fibrous to use in a blender, so you have to buy special equipment or rely on a local smoothie joint?  Luckily, you actually can make wheat grass juice in a blender with an ingredient you definitely have access to: WATER.  You’ll love how easy and inexpensive it is to make!  I like to freeze the juice to add to smoothie :)

Summer Vegetable Curry

Don’t be intimidated by the longer list of ingredients for this recipe-chances are, you have many of the spices in your cabinet!  It’s really as simple as sautéing fresh in-season summer veggies, adding your favorite broth and silky coconut milk, and finishing with fragrant summer herbs.  Be sure to include the refreshing mint and basil upon serving, as they brighten and balance the flavors of the curry!  Serves  

Mexican Cauliflower Rice Bowl

I regret not getting on the cauliflower rice bandwagon sooner, because it really is so easy and so delicious! The great thing about cauliflower rice is that it acts as a base for any flavor profiles you want to add. My cauliflower rice dish is a play on a burrito bowl, using lots of smoky cumin with refreshing lime zest and juice. Top it with avocado slices, salsa, and sriracha hummus, or perhaps grilled chicken or fish! Serves 2 generously

Fettuccine with Saffron Cauliflower

This recipe was inspired by one of my favorite meals, served for dinner at an olive plantation I stayed at in Sicily- it was so good, I make a variation of it frequently, and my family always requests it when I visit (so you know this one’s a winner)! The cauliflower becomes nutty when sautéed, the pine nuts add crunch, the raisins add chewy sweetness, and the saffron makes it an incredible golden color!

Visiting Cape Cod at a young age made me fall in love with clam chowder, but as a child, it seems you never have to worry about calories and fat! For the health-conscious, I have created a creamy clam chowder WITHOUT the cream and butter, and you won’t feel like you are compromising on flavor or texture  Serves 3-4

Mango and Cashew Curried Chicken Salad

Nothing says summertime like homemade chicken salad atop crusty whole grain bread or a bed of arugula, and this recipe takes chicken salad to a whole other level of flavor: I use mango instead of grapes for a touch of sweetness and juiciness, crunchy cashews in place of traditional pecans, and a lightened-up dressing using yogurt that pays homage to Indian cuisine!
